Rain, rain, rain. I needed a way to cook fish indoors without having to move ashore for the next day or two. We resurrected this camping staple which should work for any kind of fish.
Fish baked in foil
4 trout, dressed
Lay each trout on a piece of foil that is about four inches longer than the fish.
Add 1 1/2 teaspoons of butter or olive oil
Sprinkle with lemon juice, white wine, or plain water, about two tablespoons.
Sprinkle with Lemon Pepper, or just a little salt and pepper.
Fold the foil up around the fish and seal the ends. The foil should be loose but crimped closed.
Put the fish in a baking sheet in a hot oven. 400F if you can get your Princess that high. Cook about 15 minutes for a small trout and longer for larger fish. You can't really dry the fish out so there is room for error. The packets will puff up a bit as the liquid steams. Start a 10 minute countdown.
Open carefully and serve with rice and a salad. The liquid makes a nice sauce.
